Visit to Prescott Valley
Just came back from a 24-hour staycation in Prescott Valley where the rooms and liquor are cheap
What a charming town, where the dress code is comfort, people are friendly, and mom n’ pop’s the name. My BF and I decided to escape the 90 degree weather in Phoenix to an hour drive into Prescott where it was at least 10 degrees cooler. Never been before, I wanted to explore the little town and just get away from the city for a while. On the way, we stopped to eat at Rock Springs Cafe known for their famous pies. I was in heaven with their portion sized meals and rows and rows of baked pie-galore! Nothing beats a mid-western meal served by women who easily resemble your own Grandmother to start your getaway. Booked a room at the historic and haunted Vendome Hotel (just $129.00 for a room with free breakfast and coffee), enjoyed Prescott Valley’s best coffee shop, Cupper’s, which was conviently located next door from our hotel, downed a few brewsters at the Prescott Brewing Company, row boated at Lynx Lake, and ate, and ate. If you’re looking for a fun, cheap, and fast escape, venture to Prescott Valley-no need to bring heels, sandals will do just fine. Cupper’s Coffee review coming soon!

The Parlor Pizzeria
Catching up with my GF, Erica, we stopped in The Parlor. Hands down, it’s one of my favorite restaurants because their dough and pastas are made from scratch and price points and portions are fair. Simply stated, you can tell they take pride and care in their food and menu, which always includes freshly innovated soups and daily specials. I’m also a fan of their French press coffee-amazing! When I’m dieting, I opt for the farm green’s salad with roasted chicken, tomatoes, pears, and spiced pecans for texture-delicious! Otherwise, I love to create my own pizza with just wild mushrooms, oregano, basil, and thyme. And yes, I’ve tried all of their featured pizzas

Salsa mania for just $10.00 at the Tempe Beach Park Salsa Challenge!!!
I sampled over 30 different salsa vendors ranging from large restaurants, to store brands, and unique mom n’ pop recipes. This was my first year attending and I’m already looking forward to next year. To top it off, I was super stoked when I saw Blue Moon beer being served. Having recently discovered its flavor, I can now enjoy a few sips of beer (lightweight Asian). As for the salsa challenge, my favorite was the Shark Bite. Beer and salt = heaven.

Pizzeria Bianco x 6 = Extra Curves
*Sigh* I can hardly believe it, but I finally ate at Pizzeria Bianco, one of America’s most famous and highly rated pizzerias. After 5 different and failed attempts to try a slice of Oprah’s favorite pizza, I contemplated a plan to get in by calling on behalf of a cancer stricken girl with only a month to live and one dream: To eat at Pizzeria Bianco. Instead, I took someone’s advice and made sure I got there early on a Friday night. And when I say early, I mean not early enough because at 3:45pm, there were already 50 people ahead of me. Estimated wait time? 2 hours!!! And did I mention I got there at 3:45pm and his doors don’t even open until 5pm? 2.5 hours later…to be exact, I was seated.
Browsing through the simple menu, I decided to start with the Spiedini. The Italian Fontina cheese wrapped in Prosciutti was a little too rich for me. As for the pizzas-did you catch the plural? I decided to order all 6, yes 6 of the listed pizzas. I figured the chances of me waiting another 3 hours to get into Pizzeria Bianco were slim to none so I better order all of them and get it done! Efficiently, with the help of my BF, we finished 4.5 26″ pizzas out of the 6 ordered in one seating (the Margherita, Marinara, Rosa, Sonny Boy, Biancoverde, and Wise Guy). Told you I could throw down
The tables beside us were either disgusted or shocked.
Out of the 6, my favorite was the Marinara pizza. It stole my heart with its boastful, yet simple flavors of just 3 ingredients-tomato, garlic and oregano. The Rosa was my least favorite because of the overwhelming amount of onions. Being a meat lover, I was disappointed with the protein shakes…I mean pizzas. They were Hoover-daming and drenched with oil. Not sure if they’re always like that or if it was just our order? I prefer my pizzas to be moist, not drenched. Overall, Pizzeria Bianco does have amazing dough and tasty pizzas. I don’t think it lives up to its hype,though, taking into consideration the ridiculous wait time and my hunger pangs. But it IS an experience-to be able to try such a famous restaurant located in our own backyard. I’d return…as long as someone else stands in line. I’ve already taken one for the team.

My first personal development class was taken in college. My theory was to pick at least one “just for fun” course among the required curriculum in school to keep the workload interesting. So I signed up, not knowing exactly what personal development was all about, but it sounded rewarding. And it was. I really learned the value of forgiveness and striving to say what you mean and mean what you say. Specifically, I learned to deal with my adoptive Mother whom I’ve had a very rocky relationship with before I moved to Arizona.
Giving myself the gift to learn some vital tools in dealing with my past, embracing my truth, relieving stress, and communication has been therapeutic and positive for my continued growth. After hiring a life coach for a few months, I’ve now become a student of http://www.intuitivedevelopment.org/ in Phoenix to further my education. It’s helped me manifest my goals in careers and relationships much faster, while holding me accountable for my actions. The tools I learn in class are used everyday of my life. I’m a firm believer we need to be reminded of our humanity every so often and learn how to deal with it in ways that’ll move us beyond it. It’s definitely challenging to test my ego and fears, but the outcomes have been more than rewarding for my self-esteem

Pho is a traditional Vietnamese soup made with rice noodles and chicken, or beef, squid, vegetables, meatballs, and seafood. Most people mispronounce Pho as “Foe.” The correct way to say it is, “Fuh.” Like saying Fu-ck you, but without the “ck” and the “you.”
Pho Da Lat
Cozy ambiance with a large menu. Everything from Pho to noodle and rice dishes. They also serve Thai iced tea (with whipped cream, unless you decline) and some great spring rolls for appetizers. A great place for a cozy and casual date.
Cyclo Vietnamese Cuisine
A small and quaint restaurant with award after award, hanging on the walls. There is usually a line of people outside her door (owner also serves) waiting to be seated. Her menu is small, but good. It’s also a BYOB restaurant, so bring a bottle of wine and lots of friends.
Saigon Pho
Cheap prices and fast service. This is a great place to stop on a lunch break. The Thai iced tea is better here than at most places, too. The only thing I don’t like about this place is that it’s chicken poker. There are days where my Pho is packed with lots of protein and other days not so much.

It’s no secret that I’m addicted to caffeine. I’ve had the most amazing love affair with coffee since 1993 and we’re still going strong, if not stronger
